Broccoli seems to be one of those veggies that you either love or hate. It has always been one of my favorite vegetables, especially topped with lots of cheese, but even if you’re not a fan, I think you’re going to really like this recipe, not only because it’s incredibly easy (4 ingredients!!), but these little broccoli cheese bites are really yummy, too. This is my favorite way to get my kids to eat their veggies because the broccoli is disguised so well, they don’t even realize they’re eating something healthy. They LOVE them! We like to eat them dipped in ranch as an after school snack. Do you like broccoli? I LOVE, seriously love broccoli. Favorite way to eat it? Steamed, served with a little mayo. Seriously, who knew cauliflower could be such a chameleon. I mean, once it’s prepped and tossed up in the sweet and spicy chilli sauce it’s hard to believe that it’s even cauliflower hidden under there! WHY I LOVE CAULIFLOWER: I love cauliflower in vegetarian cooking for its versatility. You can turn it into soup, rice and now even deliciously batter-coated bites! Cauliflower has a great dense and meaty texture, so it’s really satiating as far as veggies go. It also contains tons of vitamins, fibre and antioxidants. So basically you should be making this recipe on the reg. (I know I’ve been…) This bang bang cauliflower can be served up as a main dish over rice, or served up for as an Asian style appetizer. Is this not the cutest cake you have ever seen?? It’s a carrot cake for one person, and not only is it cute: it tastes amazing! And it is totally legitimate breakfast food. You could also use it as a snack or dessert. With spring in the air, my mind was on carrot cake. I have several carrot-cake-inspired recipes on my list of recipe ideas, but a THM:E single-serve carrot cake won out. It turned out even better than I had hoped it would, and I had so much fun photographing it. In my family, the cake that is always requested for birthday celebrations or other events is a Carrot Cake. I’m totally fine with that request because I happen to love carrot cake too. A few months ago, for my son’s 20th birthday, I made a non-traditional style carrot cake for him. This particular recipe holds a special place in my heart.  This my Grandma Carole’s chocolate ribbon dessert recipe.  My Grandma may not have cooked or baked much, but the things that she did make are filled with some very sweet memories for me.  I believe this is one recipe that reminds all my family of Grandma.  I was thinking about no-bake type recipes the other day and this one popped in my head.  It is near no-bake.  The crust has to be baked, but the rest is mix, spread and refrigerate.  Don’t let the simplicity fool you.  This is a truly delicious dessert.  The creamy layers are rich and will fix a chocolate craving.  I hope you love this recipe as much as our family does. The crust is simply flour, butter and ground nuts.  I put all 3 ingredients in a food processor and pulse until it is well mixed.  Sprinkle the crust in a lightly greased 9×13 baking dish.  Press the crust down and bake for 17 minutes at 350 degrees.  Cool baked crust completely before adding the layers.

Good morning! If your week has been anything like mine, your in need of a pick me up and a little sunshine :) Today I have just the thing for you, Lemon Rolls or we could just call them sunshine rolls! A few weeks ago Christy at Made From The Oven posted some easy cinnamon rolls made from a cake mix. She even tried some in chocolate and added sprinkles for a birthday cinnamon roll. I knew I had to try out her recipe, and I'm so glad I did! When I went to pull out a cake mix from my baking cabinet and came across the lemon cake mix I've been avoiding. I never really like lemon desserts but I bought the cake mix telling myself I needed to try to make a summery treat with it. I've never had a lemon roll before...so why not give it a try. Chances are you’ve probably seen at least one version of this traditional potluck favorite dessert, which goes by many names: Hello Dolly Bars, Coconut Dream Bars, Seven Layer Bars, Magic Cookie Bars, Coconut Magic Squares… Over the years, these bars have been one of the most frequent recipe requests I’ve gotten from readers, and it’s not hard to see why the recipe is so popular! A soft graham cracker crust topped with layers of coconut and chocolate makes the bars truly as magical as their title suggests.
