BBQ Meatloaf Muffins with Sweet Potato Topping

Image
Meatloaf regularly finds its way on my weekly meal plan for several reasons, not only because it’s delicious and one of my favorite comfort foods, but it’s also easy to make ahead, freezes well (both raw and fully cooked) and it’s a more economical way to get grass-fed beef into our diet because ground meat is way less expensive than steak, but you already knew that. Cheddar BBQ meatloaf muffins are mini meatloaves made in a muffin tin and topped with BBQ sauce and cheese. An easy meatloaf recipe for dinner! Cheddar BBQ meatloaf muffins are mini meatloaves made in a muffin tin and topped with BBQ sauce and lots of cheese. This easy meatloaf recipe is a quick and easy dinner that’s ready in 30 minutes, and it’s super kid friendly and picky eater approved! My entire family loves meatloaf, and it’s probably one of the few foods that we all agree on. In fact, that’s one of the reasons that this blog happens to be called Meatloaf and Melodrama. The only reason that I don’t make mea...

The Juiciest and Moist Low Carb Banana Blueberry Muffins

Image
These low carb banana blueberry muffins are healthier, simpler, and sweeter than any ordinary muffin, and made in the oven coming out moist and mouthwatering with only 4 ingredients! Keto friendly. I made them several times, experimenting, to achieve the perfect texture and flavor. These low carb banana blueberry muffins are dairy free, gluten free, paleo and keto friendly, no added sugar and a great dessert bite to satisfy a sweet craving without packing the extra weight and fat. Not to mention that you will feel much better after eating these and will not have the over-stuffy feeling after eating the ordinary muffin that is loaded with sugar and flour. These banana blueberry muffins have only 8g of carbs and 4g of sugar per muffin vs. the generic blueberry muffin has over 60g of carbs and 37g of sugar. Ha! Bananas are a staple in my kitchen. I eat it for breakfast with toast or yogurt, after a workout, or just as a snack. But, too often, I buy more than my husband and I ca...

BLUEBERRY MUFFINS WITH ALMOND FLOUR (KETO, LOW CARB)

Image
These blueberry muffins are soft and fluffy, great for breakfast or as a convenient snack. They’re only 3.5g net carbs apiece and will help satisfy your sweet tooth cravings. They’re pretty straightforward to make, with all of the ingredients mixed in a single bowl. The batter is transferred to greased muffin tin liners, and they’re baked in the oven until golden on top. These muffins are made with heavy cream; for sour cream muffins, check out these low carb banana bread muffins. I decided to create my first ever gluten-free muffin recipe.  Although I don’t follow a strict gluten free diet, I have been intrigued by almond flour for quite awhile which just so happens to be the ideal wheat alternative for baking. Of course, the million dollar question: “How do they taste?!”  If you’re looking for a moist, nutty and fluffy muffin that won’t go straight to your hips, this one is for you! My boys eat these by the fistful and I’m right there with him. It’s a good thi...

Irish Soda Muffins

Image
It’s officially March!    Spring is on the horizon along with the holidays of  St. Patrick’s day and also Easter.  I don’t know about you, but we are eager for Spring….the warmer temperature, the shining sun and nature begins to come back to life.  We see the color green return.  Ah, yes – green….a reminder of St. Patrick’s Day.  A fun traditional Irish holiday that started based on a fascinating man named Patrick.  Click to learn more about the story of Patrick and why we celebrate every year on March 17th.  It will give you insight and a greater appreciation of this annual holiday other than just clovers, parades and wearing green. I do not have much Irish in my blood line, but that doesn’t stop us from celebrating!   Each year on St. Patrick’s day I try to dabble into some classic Irish recipes and fun green desserts.   Below is a delicious twist on classic Irish Soda bread.  These Irish Soda Muffins are dense, m...

Raspberry Filled Donut Muffins

Image
These soft, moist cake donut muffins remind me of little jam filled round donut balls made by local bakeries years ago. They could be found at your local neighbourhood store or supermarket when I was growing up here in Newfoundland. As a kid I remember thinking that I would make them with more jam inside and roll them in powdered sugar too. That memory of childhood inspired this variation of cake donut muffins. Just around the corner from our apartment, there is a coffee shop that sells some really amazing doughnuts. I’m not necessarily a raving fan of doughnuts, but these things are ridiculously good. Somehow I manage not to go out and get one on a daily basis. Be impressed. Perhaps even more dangerous than the proximity of those doughnuts, though, is the discovery of this recipe for doughnut muffins. It’s more than a bit frightening to know that I can have these beauties whipped up so quickly. And without even leaving home! These delightful muffins are truly reminiscent in...

Healthy Breakfast Egg Muffins

Image
It’s nice to see you, 2017! While last year will be tough to beat, I have a sneaking suspicion that the New Year is going to be quite the flavor-packed extravaganza. We have a whole host of new recipes and guides lined up for your eating and entertaining pleasure. And we’re kicking things off on the light and tasty front with none other than Healthy Breakfast Egg Muffins. I spent last weekend in Kansas City meeting my precious new niece and helping my sister stock her freezer with a variety of easy freezer meals. One of her requests was for Healthy Breakfast Egg Muffins that she could pop into the microwave whenever she needed a fast, filling breakfast or snack. Consider these perfectly portable egg muffins to be the equivalent of handheld omelettes. They’re high in protein and low in carbs, making them the ultimate breakfast-on-the-go. Best of all? You can customize the fillings and toppings to suit your tastes. Not a fan of spinach? Skip it! Quite the carnivore? Stir in co...

Chocolate Banana Muffins

Image
With Valentine’s Day coming up, I wanted to get you a special chocolatey treat. The truth is though, that I’ve been planning to make these chocolate muffins ever since I made gluten free pumpkin muffins last year. We loved how tender and soft those muffins came out, and I knew I could swap out the pumpkin for mashed banana and get the same result. Healthier chocolate muffins are great for Valentine’s Day, but really they’re great any time of year. These chocolate muffins are almost brownie-like in flavor and have that perfect crackle on top, while the inside is soft and light. With melty chocolate chips inside, a warm chocolate banana muffin is the ultimate afternoon treat with a cup of turmeric tea. I made a similar almond flour Paleo Chocolate Banana Muffin in the past, but I like this one even better. And while in the spring and summer I love these gluten-free Carrot Cake Muffins, right now I’m all about the chocolate. Chocolate and banana fan? You are going to love these muf...
