Chocolate Zucchini Bread

Image
Chocolate zucchini bread is the perfect way to use up any extra zucchini bread you have laying around. And I bet you’ll make it a priority to have extra zucchini after tasting this recipe! 😉 The other day I met my parents for dinner at a local Mexican restaurant for some chips, salsa, and margaritas. Also chicken fajitas, because duh. That morning I had baked a couple loaves of this chocolate zucchini bread recipe and I knew that if I kept both loaves in my house, I would eat both loaves. By myself. In one day. So, I stuck a loaf of bread in my purse and smuggled it into the restaurant like a weirdo and passed it off to my mom. This Double Chocolate Zucchini Bread makes the perfect afternoon snack whenever you’re in need of a chocolate fix.  It has a deep chocolate flavor from unsweetened cocoa powder and bittersweet chocolate chips, yet it’s not so sweet that it tastes like dessert. It’s also loaded with zucchini, so there’s some virtue in it. Begin by grating your zu

Chocolate Chip Pumpkin Bread

Image
Chocolate Chip Pumpkin Bread is filled with melting chocolate chips and bursting with autumn spices. Is there anything more quintessentially fall than the smell of pumpkin spices drifting through the house? I tasted pumpkin bread for the first time about 15 years ago, when one of my students shared her mom’s pumpkin muffins with me. (Hi, Debbie!) I have no idea how I survived up until then without this awesomeness in our life, because pumpkin muffins have been a year-round (yes, pumpkin haters – year round) favorite in our home ever since. What To Do With Canned Pumpkin Pumpkin bread and muffins are certainly not just for fall. You’ll find a can of pumpkin in my pantry January – December. Because pumpkin muffins are a delicious wonder that shouldn’t be relegated to holiday baking alone. That said, you might also find me making Pumpkin Mousse, Layered Pumpkin Cheesecake Pie, Pumpkin Coffee Cake and endless other delicious things from a lovely little can of pumpkin puree.

Whole Wheat Cinnamon Crunch Banana Bread

Image
This Whole Wheat Cinnamon Crunch Banana Bread is a fun breakfast idea. Healthier with Greek yogurt, oil & whole wheat flour, yet such a special treat! I’m SO excited to share this recipe. It’s my favourite banana bread in the entire world. Yes, favoriter than anything with chocolate, and that means something coming from me. I think it’s the streusel-y crumb topping, because streusel anything is the best I make this with my toddler all the time, and we usually make a double batch of streusel because we’ll eat them before baking anyways ? This is a great recipe to make with small kids, because all wet ingredients just need to get mixed in a bowl, sprinkle with the dry ingredients and fold. Em is already pretty good at measuring out the dry ingredients, and she loves whisking the wet ingredients. I make the streusel and she sneaks little bites when she thinks I don’t see her. It’s the cutest thing. I don’t mind making this quick bread often, because I made quite a fe
