Instant Pot Apple Cake (Recipe Video)

It’s still warm here in Texas, but with a new school year starting in the next week or so, I’m already feeling the itch for Fall recipes! (I’d love it if the weather would follow suit!) Apples are one of my favorite fruits year-round, but something about that combination of warm apples and cinnamon just screams Fall. So I just can’t wait for cooler weather to try out some of our new Fall themed recipes. This Instant Pot Apple Cake is super easy to make (who doesn’t love recipes that you can just set and forget?) Plus this cake is super moist since all the moisture is locked in while it “bakes.” I could eat this Instant Pot Apple Cinnamon Cake for breakfast, snack, dessert – ok I could pretty much eat it any time. One of the very few desserts my mom made when I was young was apple strudel.  The smell alone was enough to make all 6 kids get along for 10 minutes of a Family Home Evening lesson so that we could get to that strudel faster.  Warm, sweet apples covered in a crunchy, buttery crumble, topped with a scoop of vanilla ice cream.  Mmmmm, good memories right there. My grandma also influenced my love of apples with her incredible apple pie.  Fresh Huckleberry Pie and Apple Pie were the only desserts I ever saw her make and I was convinced she was famous for them.  I hated huckleberries as a kid, but that apple pie, piping hot from the oven, with sparkling sugar crystals on top, was heaven. CAKE MIX LEMON SWEET ROLLS

Good morning! If your week has been anything like mine, your in need of a pick me up and a little sunshine :) Today I have just the thing for you, Lemon Rolls or we could just call them sunshine rolls! A few weeks ago Christy at Made From The Oven posted some easy cinnamon rolls made from a cake mix. She even tried some in chocolate and added sprinkles for a birthday cinnamon roll. I knew I had to try out her recipe, and I'm so glad I did! When I went to pull out a cake mix from my baking cabinet and came across the lemon cake mix I've been avoiding. How do you feel about Valentine’s Day? I’m pretty fortunate to have a husband of 27+ years who doesn’t need the calendar to tell him when to be romantic.  I don’t know about you, but those days when he runs to the store when it’s below zero and snow piled up to his knees because I mentioned that I’m out of my favorite cereal…..that’s love.  When I’m feeling my worst, and he looks at me and tells me I look beautiful……that’s love. I’m a sucker for angel food cake, probably because my Grandma made it for me as a child for each and every birthday. I love that it is a fat free cake too so I don’t feel guilty if I have an extra piece on “those days” and when I made this Instant Pot angel food cake it came out super fluffy like it does in the oven too!!
