Lemon Meringue Cupcakes

Image
These Lemon Meringue Cupcakes are made with a lightly lemon flavored cupcake, lemon curd filling and lightly toasted meringue frosting! It’s like Lemon Meringue Pie in cupcake form – so fun! I’ve been loving turning fun pie flavors into cupcakes! Between the Banana Cream Pie Cupcakes, Boston Cream Pie Cupcakes and now these Lemon Meringue Cupcakes, these are some super fun cupcakes! I always love the surprise filling too. It’s a whole other way to add more flavor and texture to make a cupcake that much more interesting. Sweet and sunny, with all the things we love about lemon meringue pie — but in cupcake form. A microwave version of traditional lemon curd saves you time, but doesn't skimp on flavor. Let's hear it for Lemon Power! My mom and I have a thing for lemon curd. We eat it by the spoonful. On top of yogurt, on toast… and don’t even get me started on lemon meringue pie. This weekend I was craving some lemon meringue pie, but didn’t want to commit to a whole p...

Cocktail cupcakes are back and this time using strawberry moscato wine! These vanilla cupcakes are spiked with moscato, a sweet, slightly bubbly, wine. Moscato is sweeter than most wines so it naturally adds a sweetness to the cupcakes. I specifically chose a strawberry flavored moscato because, hello, pink frosting! Delicious Moscato cupcakes with strawberry frosting. These delectable light and fluffy cupcakes make perfect treats for Valentine’s day, a wedding reception, bridal shower or girls night out. Keto Cheesecake Cupcakes

Traditionally in my circle of friends if you have a birthday I will make you a dessert of your choosing. This is the first birthday that has come up since I gave up gluten and carbs. Keto Cheesecake Cupcakes. Baking a cheesecake is a very delicate process, but it doesn’t have to be! Making a batch of mini cheesecakes is a lot quicker and a lot simpler! This mini cheesecakes recipe is very keto friendly- the cream cheese is high in fat, while the erythritol and almond meal are low in carbs. You could fool anyone with these keto treats, they taste like the real thing- fluffy and refreshing. They’re super simple to make, but to really appreciate their taste, it’s important to refrigerate them as long as you can. We refrigerated them overnight, but even a few hours will do. They will set very nicely and coaxing them out of the muffin tin won’t be too hard. To help get the mini cheesecakes out of the tins you could also line the tins with cupcake liners before baking. Looking for a...

Strawberries And Cream Filled Cupcakes

Image
Summer means fresh berries in abundance and it’s the ideal time to whip-up a batch of Strawberries And Cream Filled Cupcakes. Vanilla cupcakes are filled with a fresh strawberry cheesecake flavored filling then topped with whipped cream and one glorious sweet strawberry. It may sound labor intensive but, they’re quite easy to assemble and they make for a beautiful presentation. These strawberries and cream filled cupcakes begin with a yellow cake mix but, if you prefer baking from scratch I highly recommend you take a look at my homemade butter cake recipe to use instead. I adore baking completely from scratch however, I also feel bakers of all skill levels can be successful making delicious baked goods using some convenience items occasionally and to save time. The centers of these cupcakes are filled with fresh strawberries, a white chocolate ganache and a dreamy cheesecake filling. Let’s not stop there it’s simply imperative that each cupcake be frosted with a generous dollop ...
