Guys, it’s sliders time! If you’re new to the blog, welcome to our ongoing series where we feature these delicious mini sandwiches at least twice a month. Check out the list below of what we have so far. As you can see, we already have a quite a selection on the blog but although they’re all yummy and tasty, G and I do have our favorites. While he’s partial to the Philly and I can’t get enough of the chicken bacon ranch, we both agree these mini sloppy joes take the crown! Meaty, saucy, cheesy, and loaded with comfort food flavors, they’re a sure hit with kids and adults alike. I think I’ve done it. I’ve made what just may be THE perfect snack for your game day festivities. Or pop a batch in the oven on Halloween night and serve them alongside a big bowl of coleslaw for a fun pre-trick-or-treat meal with the kids.  In my case, “the kids” are all well over 6 feet tall, a couple have scruffy beards, and there may be a tattoo here or there, but hey, they’re still my babies. If you’ve ever been to a Bonefish Grill you will have undoubtedly tried their Bang Bang Shrimp. It’s their famous deep-fried shrimp appetizer that has a creamy spicy mayonnaise-based sauce on top and it has grown to have a bit of a cult following. Before I ever went to a Bonefish Grill I had a friend ask me if I knew how to make Bang Bang Shrimp. That, in fact, was the reason I went to Bonefish for the first time. I didn’t have an answer for my friend, but once I discovered it was a deep-fried dish I didn’t really think about it again. I don’t often deep-fry at home for so many reasons, so I wasn’t about to make bang bang shrimp in my kitchen. Now that air-frying has come into our lives… there is an answer! If you check out my recipe category  for Eggs, you see that I’ve come up with a lot of variations for low-carb breakfast casseroles through the years. I make breakfast casseroles on the weekend for Weekend Food Prep, cut into individual servings, and keep in a container in the fridge to eat for breakfast during the week. Low-Carb Breakfast Casseroles are definitely good any time of year, but when the weather gets cold you’re more likely to turn on your oven to make a breakfast like this, so I’m reminding you about this mega-popular Spinach and Mozzarella Egg Bake. EASY SAUSAGE CASSEROLE RECIPE WITH MOCK POTATOES

I wanted to serve my family an alternative potato dish this Thanksgiving. When I used diced daikon radish in a low carb clam chowder, I wondered how it would be in something like scalloped potatoes. Since the Japanese daikon radish has very little flavor, I thought an additional item should be added to the dish. We have lots of venison sausage in the freezer so it made sense to use some with the daikon. Although I was seeking a scalloped potato dish, the result was more like a casserole. That’s why I’m calling it an easy sausage casserole with mock potato. I thought of calling the dish a sausage potato casserole, but that’s a little misleading. Although the radish does taste like potato, technically it’s not. We hope you all had a very Merry Christmas. We enjoyed watching Caleb wake up on Christmas morning to open presents. I was craving some low carb mozzarella sticks after my daughter ordered some at a restaurant. But, I decided to try something new with the recipe. Rather than dip the cheese in egg and then a gluten free coating, I just wrapped each in bacon. I used pre-cooked bacon that was baked the day before. I like to bake bacon in the oven in large batches and keep it in the refrigerator for quick snacks and salad topping. It’s also great to use as an ingredient in recipes. Bacon wrapped cheese sticks.
