Keto Fried Chicken Tenders Chick-Fil-A Copycat

Image
This Keto Fried Chicken almond flour recipe will make the perfect Keto fried drumsticks, Keto fried chicken breast or low carb chicken tenders. Originally the recipe was intended to be pan-fried chicken tenders, but I discovered it’s also an easy Keto air fryer recipe too. Don’t you always crave Chick-Fil-A on a Sunday? Which is probably for the best since Chick-Fil-A's fried chicken isn’t exactly on your low carb diet! BUT now you can have this Keto version of Chick-Fil-A’s fried chicken tenders recipe anytime you want, even on Sundays! #lifechager You just need some keto diet basics, almond flour and Pork Panko (Pork rinds) and pickle juice! Ok, pickle juice isn’t exactly a Keto pantry staple, but I’ll explain… You’re craving the savory crunch of fried chicken. But you don’t want to fall off your diet gorging at Chick-fil-A (or maybe it’s Sunday…). What do you do? Recreate the classic with this healthy recipe! Keto Crusted Buttery Chicken Casserole

Image
Looking for an easy-to-assemble keto chicken casserole that is packed with flavor? Look no further than this super tasty Crusted Buttery Chicken Casserole that contains only ONE gram of net carbs per serving! For this recipe, I modified a classic casserole recipe, often called “Chicken Ritz Casserole,” that uses (no surprise here) crushed Ritz crackers at the top and bottom of the casserole to add some crunch to a creamy, buttery filling. I subbed crushed pork rinds for the Ritz crackers, made a keto Condensed Cream of Chicken Soup (so easy to do!), and played around with the ingredients just a bit to come up with my own version. Chicken is widely popular because it’s high in protein but low in calories and rich in essential vitamins. It’s favored by both adults and children because when cooked, it has a soft and tender texture and a mild flavor that often won’t turn away even the pickiest eaters. Chicken can be the star of the show for many family-friendly meals. If you’re fo

Low Carb Chicken Divan

Image
Low Carb Chicken Divan is simply divine! This comforting casserole has a creamy sauce made with chicken, broccoli, cheddar cheese and cauliflower rice. You won’t even miss the extra carbs. Are you a fan of easy chicken dishes? I sure am. The easier the better for me, especially on busy weeknights. This is a low carb Chicken Divan casserole. It’s made with broccoli and mornay sauce. Mornay is a sauce that contains grated cheese. Chicken Divan originated at a 1950s New York restaurant, the Divan Parisienne. Here’s a low carb chicken divan recipe for the famous casserole with broccoli and Parmesan cheese. I like to use avocado mayonnaise in this casserole as I’ve been staying away from the kind made with seed oils. It’s pretty easy to make homemade mayonnaise as well. I’ve even made it with coconut oil. It’s best to steam the broccoli first. I like to use fresh broccoli and put it in my steamer for about 15 minutes. If you like convenience, you can always use a “steam in bag” f

Air Fryer Basic Chicken Breasts

Image
I know this seems like a pretty dumb, yet an easy thing to do in air fryer. I looked up air fryer chicken breast recipes and there were a lot of recipes for breaded chicken and BBQ chicken. There were no recipes for just a plain old chicken breast cooked in the air fryer. This chicken comes out so juicy and moist and who doesn’t like having leftover cooked chicken on hand to make leftovers with? Summer is arriving shortly and tomorrow is already May. Can you believe that? It will be the first time ever having an air fryer during the Summer and I’m looking forward to using that and my smoker/grill. You can use your air fryer to french fries and toast some buns with. Then make burgers on the grill. That sounds so good right now. This better-than-basic chicken is the next best thing since rotisserie chicken; in fact, the only thing that’s basic about it is the ingredients! Making all-purpose chicken on the fly is the key to meal prepping and throw-together weeknight dinners which i

Keto Crack Chicken in the Crock Pot

Image
Are you looking for a Keto friendly, low carb meal idea that you can serve to the whole family? You never want to be making one dinner for yourself and another for the kids, so finding something the whole family can enjoy while on a Keto diet is key. Luckily, with this recipe for Keto Crack Chicken in the Crock Pot, you can make one meal that the entire family will love. Even better, this meal requires almost no work thanks to the slow cooker. Be sure to also try these Keto Cheesy Taco Cups with Guacamole. I have been so intrigued by this Crack Chicken recipe that has been floating around!  What could be better than shredded chicken mixed with cream cheese, ranch dressing mix, cheddar cheese, and bacon? I went a little rogue with my recipe and I am not using a ranch dressing mix packet.  It’s not something I keep in my house but I do keep a slew of dried herbs and spices. So for this crack chicken recipe I used some delicious, flavorful spices and herbs to bring that ranch fla

Low Carb Chicken Zucchini Enchiladas

Image
This Low-carb Chicken Zucchini Enchilada is made with “zucchini tortillas” and it’s loaded with enchilada sauce, chicken, and cheese. It’s also gluten-free and very flavorful! These chicken enchiladas are perfect for serving large groups or meal prepping ahead of time. Shredded chicken is tossed in a keto-friendly enchilada sauce and wrapped in thin slices of crisp zucchini for a low carb meal. Grilled chicken is prepped and shredded in advance for easy assembly. However, ground beef, sliced steak, or shredded pork can also be swapped in. When mixed with a tomato-based enchilada sauce, the meat takes on a seasoned flavor of cumin, smoked paprika, and garlic. I’m going to start this post saying that I LOVE this Low-carb Chicken Zucchini Enchilada recipe, just because I really DO. When I saw this recipe video on the Delish website, I was a little skeptical about cooking enchiladas with zucchini. However, I thought it’s such a different recipe that I decided to adapt this recipe

Cheesy Chicken Enchiladas

Image
As I said before, Cheesy Chicken Enchiladas are one of my favorite Mexican recipes. They are so easy to make, the baked tortillas have a really nice crunch (I love crunchy foods!), and this dish is pretty-much fool-proof! Want in on a little secret? I thought so! The secret to their slight crunch is the baking method. The assembled enchiladas bake uncovered for the first 10 minutes at a high temperature. Then, the oven temperature is lowered and the enchiladas are topped with sauce and cheese, covered with aluminum foil, and returned to the oven to bake 20 minutes. The final step is to remove the foil and bake uncovered for another five minutes or so to crisp them up! Ingredients 1 can (18.5 oz) Progresso™ Traditional Chicken and Cheese Enchilada Soup 1 can (10 oz) Old El Paso™ hot or mild enchilada sauce 2 cups shredded cooked chicken 2 cups shredded Monterey Jack cheese (8 oz) 10 corn tortillas (6 inches) 2 medium green onions, thinly sliced Instructions Ste

Easy Whole30 Chinese Orange Chicken: Paleo, Gluten-Free

Image
This easy Whole30 Chinese orange chicken is the best takeout fake-out ever. Sometimes you just need some orange chicken in your life, and this version is much healthier and there’s no delivery fee! It’s also a Paleo orange chicken recipe, which makes it gluten free and made from real ingredients, so you can skip the MSG! In a past life, it was not uncommon of me to order Chinese delivery at least once a week. It was my favorite go-to. I’d almost always order the orange chicken. It still remains one of my favorite flavors. Which is why I knew I needed to figure out how to make it Paleo and Whole30. This Whole30 Chinese orange chicken obviously isn’t the real thing, but, I will say, it’s a really great takeout fake-out. When I started making this for myself and my boyfriend, he prompted me to add it to the blog to go along with the other Chinese inspired recipes I have here. It took a little refining and tweaking to get it blog ready, but hey, neither of us complained about having

Chicken pot pie, where the pie part is biscuits.

Image
Chicken Pot Pie made easy! We love this Biscuit Chicken Pot Pie with pre-made biscuits, it’s a delicious fast way to get dinner on the table. Chicken Pot Pie is one of the best comfort foods around. Our family sure loves it. We are trying to simply things by taking this classic and giving it a ‘semi-homemade’ hack by using Grand biscuits. With flavors you know and love, it really doesn’t get easier than this. Shredded chicken from a rotisserie chicken is perfect for this recipe, and such a time saver. Are you a fan of the rotisserie chicken? I totally am! Sometimes I’ll pick up two, shred both of them and then just freeze one. It’s always nice to have on hand, especially for recipes like this. So here’s the thing…my first attempt with this recipe, the biscuits did not fully cook. The top half did, but the bottom half of the biscuits were still dough-y. Here’s the solution: pre bake the biscuits on a sheet pan lined with parchment paper. It’s helpful to precook the biscuits f

SOUR CREAM CHICKEN ENCHILADAS

Image
Sour Cream Chicken Enchiladas are rich, creamy and easy to make!  Tender juicy chicken, onion and loads of cheese are wrapped in flour tortillas and smothered in a simple homemade sour cream sauce, topped with cheese and baked until brown and bubbly! Originally published April 6, 2014. Now updated with re-edited text and photos. Instructions were are also reworded to clarify points. I’m a Mexican food hound… meaning I love it ALL. But a lot of my Mexican cooking tastes similar because I love the taste. I’ll call it spicy taco-ish. And most of my chicken dishes have some of that red chili taste, also. This is a different good. Very good but not the “kicktail” Mexican I’m known for and not spicy. Based on a geniouskitchen.com recipe Simple Sour Cream Enchiladas but I don’t know the origin since essentially the same recipe appears in many places. The geniouskitchen.com version is from 2005 but I found one all the way back to 2001, but is just a posted recipe on a board so who
