Moscato Cupcakes

Image
Cocktail cupcakes are back and this time using strawberry moscato wine! These vanilla cupcakes are spiked with moscato, a sweet, slightly bubbly, wine. Moscato is sweeter than most wines so it naturally adds a sweetness to the cupcakes. I specifically chose a strawberry flavored moscato because, hello, pink frosting! Delicious Moscato cupcakes with strawberry frosting. These delectable light and fluffy cupcakes make perfect treats for Valentine’s day, a wedding reception, bridal shower or girls night out. Mother’s Day is just around the corner! I’ve been scheming cute cupcakes to make worthy centerpieces for Mother’s Day gatherings. I found this delicious moscato cupcake recipe. Instant Pot Apple Cake (Recipe Video)

Image
It’s still warm here in Texas, but with a new school year starting in the next week or so, I’m already feeling the itch for Fall recipes! (I’d love it if the weather would follow suit!) Apples are one of my favorite fruits year-round, but something about that combination of warm apples and cinnamon just screams Fall. So I just can’t wait for cooler weather to try out some of our new Fall themed recipes. This Instant Pot Apple Cake is super easy to make (who doesn’t love recipes that you can just set and forget?) Plus this cake is super moist since all the moisture is locked in while it “bakes.” I could eat this Instant Pot Apple Cinnamon Cake for breakfast, snack, dessert – ok I could pretty much eat it any time. It’s crazy good stuff!! And when you enjoy this Instant Pot Apple Cake with a PSL (try our healthy homemade pumpkin spice latte here!) you’ve got the ultimate Fall pairing! Hope you love it too! Do you sometimes find your fridge overwhelmed with too many apples?

INSTANT POT CARAMEL APPLE CHEESECAKE

Image
One of the very few desserts my mom made when I was young was apple strudel.  The smell alone was enough to make all 6 kids get along for 10 minutes of a Family Home Evening lesson so that we could get to that strudel faster.  Warm, sweet apples covered in a crunchy, buttery crumble, topped with a scoop of vanilla ice cream.  Mmmmm, good memories right there. My grandma also influenced my love of apples with her incredible apple pie.  Fresh Huckleberry Pie and Apple Pie were the only desserts I ever saw her make and I was convinced she was famous for them.  I hated huckleberries as a kid, but that apple pie, piping hot from the oven, with sparkling sugar crystals on top, was heaven. Oh yes, my apple love is strong.  After havin' babies, my body's reaction to sugar, however, made eating desserts not so fun anymore.  I created this Naturally Sweetened Apple Pie for that reason and it is one of my favorite desserts ever, ever! For my family that loves rich, sweet, over th

BBQ Meatloaf Muffins with Sweet Potato Topping

Image
Meatloaf regularly finds its way on my weekly meal plan for several reasons, not only because it’s delicious and one of my favorite comfort foods, but it’s also easy to make ahead, freezes well (both raw and fully cooked) and it’s a more economical way to get grass-fed beef into our diet because ground meat is way less expensive than steak, but you already knew that. Cheddar BBQ meatloaf muffins are mini meatloaves made in a muffin tin and topped with BBQ sauce and cheese. An easy meatloaf recipe for dinner! Cheddar BBQ meatloaf muffins are mini meatloaves made in a muffin tin and topped with BBQ sauce and lots of cheese. This easy meatloaf recipe is a quick and easy dinner that’s ready in 30 minutes, and it’s super kid friendly and picky eater approved! My entire family loves meatloaf, and it’s probably one of the few foods that we all agree on. In fact, that’s one of the reasons that this blog happens to be called Meatloaf and Melodrama. The only reason that I don’t make mea

Sloppy Joe Sliders

Image
Guys, it’s sliders time! If you’re new to the blog, welcome to our ongoing series where we feature these delicious mini sandwiches at least twice a month. Check out the list below of what we have so far. As you can see, we already have a quite a selection on the blog but although they’re all yummy and tasty, G and I do have our favorites. While he’s partial to the Philly and I can’t get enough of the chicken bacon ranch, we both agree these mini sloppy joes take the crown! Meaty, saucy, cheesy, and loaded with comfort food flavors, they’re a sure hit with kids and adults alike. I think I’ve done it. I’ve made what just may be THE perfect snack for your game day festivities. Or pop a batch in the oven on Halloween night and serve them alongside a big bowl of coleslaw for a fun pre-trick-or-treat meal with the kids.  In my case, “the kids” are all well over 6 feet tall, a couple have scruffy beards, and there may be a tattoo here or there, but hey, they’re still my babies. Keto Fried Chicken Tenders Chick-Fil-A Copycat

Image
This Keto Fried Chicken almond flour recipe will make the perfect Keto fried drumsticks, Keto fried chicken breast or low carb chicken tenders. Originally the recipe was intended to be pan-fried chicken tenders, but I discovered it’s also an easy Keto air fryer recipe too. Don’t you always crave Chick-Fil-A on a Sunday? Which is probably for the best since Chick-Fil-A's fried chicken isn’t exactly on your low carb diet! BUT now you can have this Keto version of Chick-Fil-A’s fried chicken tenders recipe anytime you want, even on Sundays! #lifechager You just need some keto diet basics, almond flour and Pork Panko (Pork rinds) and pickle juice! Ok, pickle juice isn’t exactly a Keto pantry staple, but I’ll explain… You’re craving the savory crunch of fried chicken. But you don’t want to fall off your diet gorging at Chick-fil-A (or maybe it’s Sunday…). What do you do? Recreate the classic with this healthy recipe! These Keto Chick-fil-A Style Fried Chicken Tenders

Keto Crusted Buttery Chicken Casserole

Image
Looking for an easy-to-assemble keto chicken casserole that is packed with flavor? Look no further than this super tasty Crusted Buttery Chicken Casserole that contains only ONE gram of net carbs per serving! For this recipe, I modified a classic casserole recipe, often called “Chicken Ritz Casserole,” that uses (no surprise here) crushed Ritz crackers at the top and bottom of the casserole to add some crunch to a creamy, buttery filling. I subbed crushed pork rinds for the Ritz crackers, made a keto Condensed Cream of Chicken Soup (so easy to do!), and played around with the ingredients just a bit to come up with my own version. Chicken is widely popular because it’s high in protein but low in calories and rich in essential vitamins. It’s favored by both adults and children because when cooked, it has a soft and tender texture and a mild flavor that often won’t turn away even the pickiest eaters. Chicken can be the star of the show for many family-friendly meals. If you’re fo

“JUST LIKE THE REAL THING” LOW CARB KETO LASAGNA

Image
This low carb keto lasagna recipe is easy to make and tastes just like the real thing. In fact, over the years, I have been told many times that it should be called “Better Than the Real Thing” lasagna. When I was first starting a low carb, ketogenic lifestyle, I really wanted a low carb and gluten free pasta substitution. But at the time, they were really hard to find, and the keto pasta recipes that I could find, we just plain no good! I was tired of wasting food trying low carb recipes that fell flat. Sound familiar? I knew I had to set out to make my own low carb, real food versions. There were two recipes that I immediately knew I wanted to make – a low carb mac and cheese and a low carb lasagna. So, I did exactly that. They were two of the very first recipes I ever wrote for this site and 6 years later, they are still among the most popular. The first time I made this low carb keto lasagna, I served it to Jon without telling him that it was an impasta (get it? impasta?) an

Low Carb Chicken Divan

Image
Low Carb Chicken Divan is simply divine! This comforting casserole has a creamy sauce made with chicken, broccoli, cheddar cheese and cauliflower rice. You won’t even miss the extra carbs. Are you a fan of easy chicken dishes? I sure am. The easier the better for me, especially on busy weeknights. This is a low carb Chicken Divan casserole. It’s made with broccoli and mornay sauce. Mornay is a sauce that contains grated cheese. Chicken Divan originated at a 1950s New York restaurant, the Divan Parisienne. Here’s a low carb chicken divan recipe for the famous casserole with broccoli and Parmesan cheese. I like to use avocado mayonnaise in this casserole as I’ve been staying away from the kind made with seed oils. It’s pretty easy to make homemade mayonnaise as well. I’ve even made it with coconut oil. It’s best to steam the broccoli first. I like to use fresh broccoli and put it in my steamer for about 15 minutes. If you like convenience, you can always use a “steam in bag” f

Air-Fried Bang Bang Shrimp

Image
If you’ve ever been to a Bonefish Grill you will have undoubtedly tried their Bang Bang Shrimp. It’s their famous deep-fried shrimp appetizer that has a creamy spicy mayonnaise-based sauce on top and it has grown to have a bit of a cult following. Before I ever went to a Bonefish Grill I had a friend ask me if I knew how to make Bang Bang Shrimp. That, in fact, was the reason I went to Bonefish for the first time. I didn’t have an answer for my friend, but once I discovered it was a deep-fried dish I didn’t really think about it again. I don’t often deep-fry at home for so many reasons, so I wasn’t about to make bang bang shrimp in my kitchen. Now that air-frying has come into our lives… there is an answer! The bang bang sauce is very simple. It’s simply mayonnaise, sweet Thai chili sauce and sriracha hot sauce – all whisked together. Couldn’t really be any easier. If you wanted to make the sauce lighter, you could substitute Greek yogurt for the mayonnaise, but it won’t be quite as

Air Fryer Basic Chicken Breasts

Image
I know this seems like a pretty dumb, yet an easy thing to do in air fryer. I looked up air fryer chicken breast recipes and there were a lot of recipes for breaded chicken and BBQ chicken. There were no recipes for just a plain old chicken breast cooked in the air fryer. This chicken comes out so juicy and moist and who doesn’t like having leftover cooked chicken on hand to make leftovers with? Summer is arriving shortly and tomorrow is already May. Can you believe that? It will be the first time ever having an air fryer during the Summer and I’m looking forward to using that and my smoker/grill. You can use your air fryer to french fries and toast some buns with. Then make burgers on the grill. That sounds so good right now. This better-than-basic chicken is the next best thing since rotisserie chicken; in fact, the only thing that’s basic about it is the ingredients! Making all-purpose chicken on the fly is the key to meal prepping and throw-together weeknight dinners which i

Spinach and Mozzarella Egg Bake (Video)

Image
If you check out my recipe category  for Eggs, you see that I’ve come up with a lot of variations for low-carb breakfast casseroles through the years. I make breakfast casseroles on the weekend for Weekend Food Prep, cut into individual servings, and keep in a container in the fridge to eat for breakfast during the week. Low-Carb Breakfast Casseroles are definitely good any time of year, but when the weather gets cold you’re more likely to turn on your oven to make a breakfast like this, so I’m reminding you about this mega-popular Spinach and Mozzarella Egg Bake. This recipe is so simple that I’m not sure why it’s so popular, but it’s always one of the top ten recipes on this site if you check that list in the sidebar! I did include this recipe in the recent collection of Low-Carb and Keto Breakfast Casseroles Your Family Will Love, but technically this is a variation I’m calling an egg bake. That means this Spinach and Mozzarella Egg Bake has lots of spinach and cheese, and just en

The Juiciest and Moist Low Carb Banana Blueberry Muffins

Image
These low carb banana blueberry muffins are healthier, simpler, and sweeter than any ordinary muffin, and made in the oven coming out moist and mouthwatering with only 4 ingredients! Keto friendly. I made them several times, experimenting, to achieve the perfect texture and flavor. These low carb banana blueberry muffins are dairy free, gluten free, paleo and keto friendly, no added sugar and a great dessert bite to satisfy a sweet craving without packing the extra weight and fat. Not to mention that you will feel much better after eating these and will not have the over-stuffy feeling after eating the ordinary muffin that is loaded with sugar and flour. These banana blueberry muffins have only 8g of carbs and 4g of sugar per muffin vs. the generic blueberry muffin has over 60g of carbs and 37g of sugar. Ha! Bananas are a staple in my kitchen. I eat it for breakfast with toast or yogurt, after a workout, or just as a snack. But, too often, I buy more than my husband and I ca

EASY SAUSAGE CASSEROLE RECIPE WITH MOCK POTATOES

Image
I wanted to serve my family an alternative potato dish this Thanksgiving. When I used diced daikon radish in a low carb clam chowder, I wondered how it would be in something like scalloped potatoes. Since the Japanese daikon radish has very little flavor, I thought an additional item should be added to the dish. We have lots of venison sausage in the freezer so it made sense to use some with the daikon. Although I was seeking a scalloped potato dish, the result was more like a casserole. That’s why I’m calling it an easy sausage casserole with mock potato. I thought of calling the dish a sausage potato casserole, but that’s a little misleading. Although the radish does taste like potato, technically it’s not. We hope you all had a very Merry Christmas. We enjoyed watching Caleb wake up on Christmas morning to open presents. Of course, he loved the boxes and paper just as much as the gifts. We spent the rest of the day in the kitchen and relaxing with family. It was a perfect

LOW CARB PIZZA CASSEROLE – GLUTEN FREE & KETO

Image
In the past, I’ve made a few easy keto pizza crusts such as a cauliflower crust, coconut flour pizza crust and a deep dish pan pizza. But I wanted to work on something different this time. Although I set out to make a casserole with pizza flavor, the end result of the recipe turned out to be more of a low carb pizza made in a casserole dish. The crust layer is made with a mix of eggs, cream, and a variety of cheeses along with a little garlic and dried oregano seasonings. The keto pizza needs to be made in a baking dish with sides. The mixture for the gluten free crust is thin and the baking pan needs to contain the liquid. I used a 9×13 casserole pan, but the recipe could easily be doubled to fit into an 18×26 jelly roll pan for a party sized sheet pizza. Here at the Wholesome Yum house, we absolutely love pizza night. In fact, we have it for dinner in some form almost every week! For a no crust pizza option, my absolute favorite is this easy keto low carb pizza casserole

BLUEBERRY MUFFINS WITH ALMOND FLOUR (KETO, LOW CARB)

Image
These blueberry muffins are soft and fluffy, great for breakfast or as a convenient snack. They’re only 3.5g net carbs apiece and will help satisfy your sweet tooth cravings. They’re pretty straightforward to make, with all of the ingredients mixed in a single bowl. The batter is transferred to greased muffin tin liners, and they’re baked in the oven until golden on top. These muffins are made with heavy cream; for sour cream muffins, check out these low carb banana bread muffins. I decided to create my first ever gluten-free muffin recipe.  Although I don’t follow a strict gluten free diet, I have been intrigued by almond flour for quite awhile which just so happens to be the ideal wheat alternative for baking. Of course, the million dollar question: “How do they taste?!”  If you’re looking for a moist, nutty and fluffy muffin that won’t go straight to your hips, this one is for you! My boys eat these by the fistful and I’m right there with him. It’s a good thing they a

Breakfast Casserole

Image
This easy Breakfast Casserole is so quick and easy to make. You only need 4 ingredients! It’s perfect for breakfast, brunch, or dinner. You can also prepare this breakfast casserole the night before so all you have to do is bake it the next morning! Then all you have to do in the morning is put everything together and bake. You can also prepare everything the night before, cover with plastic wrap and keep in the refrigerator until ready to bake the next morning. I can’t think of anything easier for a holiday breakfast or brunch than a breakfast casserole. Prepare it the night before to bake it the morning of for the easiest breakfast to feed a crowd!
