Onion Tomato Bruschetta with Balsamic Glaze
The balsamic glaze adds a lot flavor to this Onion Tomato Bruschetta. This is an easy to make appetizer when you are running short of time!
I always struggle to create quick and easy appetizers. Actually I don’t struggle but whenever I think of snack and appetizers, I think of Indian appetizers which I grew up eating and I have to say most of them are deep fried! We make all sorts of things like aloo tikki, samosa etc. and deep fry everything. So yes everything is delicious but not healthy and also needs some prep work. When I am running short of time and have friends/family coming over, bruschetta more often than not comes to my rescue! Isn’t it the easiest appetizer to make?

Ingredients
- ½ french baguette
- 2 roma tomatoes, medium
- 1 red onion, medium
- 5-6 basil leaves, chopped + to more to garnish
- ¾ tablespoon olive oil
- ¼ teaspoon garlic salt
- salt, to taste
- pepper, to taste
- 1.5 tablespoons olive oil
- 3-4 garlic cloves, minced
- salt, to taste
- pepper, to taste
- ¼ cup balsamic vinegar
- 1 tablespoon maple syrup
- pinch of salt
- pinch of pepper
- In a bowl mix together chopped onion, tomato and basil. Add olive oil, garlic salt, salt and black pepper to taste.
- Mix everything till well combined and then set aside for 1-2 hours. This time is important for flavors to mix-in together.
- In a plate take olive oil and add minced garlic to it. Also add salt, black pepper and mix.
- Dip the bread slices one by one in this oil-garlic mixture. Toast the bread in the oven at 350 F degrees for 8-10 minutes. Or you can toast on a grill/pan.
- While you are toasting the bread, make the balsamic glaze. To a pan on medium heat, add balsamic vinegar and maple syrup. Also add pinch of salt & black pepper (optional).
- The mixture will come to a boil, keep stirring till it thickens. This will take 4-5 minutes. You will know it's done when it coats the back of your spoon.
- Arrange the bread slices on serving plate. Top with the onion-tomato-basil mixture.
- Drizzle the balsamic glaze on top, sprinkle some more basil and serve the onion tomato bruschetta immediately!
