Easy Vanilla Cupcakes

You know how there are some recipes that everyone needs to know? Like how to make the best ever cheese on toast, how to cook the perfect steak, how to bake a potato and how to make a soft-boiled egg? Well these easy vanilla cupcakes are made with this sort of recipe. When you can make moist vanilla cupcakes, the sky is the limit. They’re just so versatile that you can take this basic recipe and turn it into anything you want!




In fact, when I developed this recipe, these cupcakes were for the base of some awesome tiramisu cupcakes that I’m planning on sharing with you really soon, so make sure you stuck around for that. Sure, you can make cupcakes out of a box. But when vanilla cupcakes from scratch are so easy to make and taste so amazing, what’s the point? I don’t know what it’s like where you live, but box mixes are really expensive around here!

A box mix that makes 12 cupcakes goes for €5/$5.50 in the supermarkets where I live. Okay, that’s not a ridiculous sum of money, but when I compare it to how much is costs me to make 12 cupcakes from scratch at home, homemade always works out much cheaper.
Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup vegetable/canola/sunflower seed oil
  • 1/2 cup buttermilk
  • optional: whipped cream and sprinkles for topping

Instructions

  1. Preheat the oven to 350F/175C and line a 12-hole cupcake mould with 12 cupcake liners.
  2. In a medium-sized bowl, stir together the flour, baking powder and salt.
  3. In a small bowl with an electric whisk, beat the 2 eggs on a medium speed for about 1 minute.
