Chicken pot pie, where the pie part is biscuits.

Image
Chicken Pot Pie made easy! We love this Biscuit Chicken Pot Pie with pre-made biscuits, it’s a delicious fast way to get dinner on the table. Chicken Pot Pie is one of the best comfort foods around. Our family sure loves it. We are trying to simply things by taking this classic and giving it a ‘semi-homemade’ hack by using Grand biscuits. With flavors you know and love, it really doesn’t get easier than this. Shredded chicken from a rotisserie chicken is perfect for this recipe, and such a time saver. Are you a fan of the rotisserie chicken? I totally am! Sometimes I’ll pick up two, shred both of them and then just freeze one. It’s always nice to have on hand, especially for recipes like this. So here’s the thing…my first attempt with this recipe, the biscuits did not fully cook. The top half did, but the bottom half of the biscuits were still dough-y. Here’s the solution: pre bake the biscuits on a sheet pan lined with parchment paper. It’s helpful to precook the biscuits f...

SOUR CREAM CHICKEN ENCHILADAS

Image
Sour Cream Chicken Enchiladas are rich, creamy and easy to make!  Tender juicy chicken, onion and loads of cheese are wrapped in flour tortillas and smothered in a simple homemade sour cream sauce, topped with cheese and baked until brown and bubbly! Originally published April 6, 2014. Now updated with re-edited text and photos. Instructions were are also reworded to clarify points. I’m a Mexican food hound… meaning I love it ALL. But a lot of my Mexican cooking tastes similar because I love the taste. I’ll call it spicy taco-ish. And most of my chicken dishes have some of that red chili taste, also. This is a different good. Very good but not the “kicktail” Mexican I’m known for and not spicy. Based on a geniouskitchen.com recipe Simple Sour Cream Enchiladas but I don’t know the origin since essentially the same recipe appears in many places. The geniouskitchen.com version is from 2005 but I found one all the way back to 2001, but is just a posted recipe on a board so...

Don't Break my Heart Chocolate Valentine Bark

Image
Sometimes things make more sense in your head than in real life. For instance, in my head this seemed brilliant and when I showed the finished product to Rob he was enthusiastic (well as enthusiastic as he tends to get :) about how pretty it was and how neat it was. He then asked what the hammer was for… um, oops. So I had the brilliant idea to make a Valentine gift in the form a chocolate bark heart. I mean, chocolate bark is stupid easy to make and can easily be made into shapes. And when I saw an 8″ heart cake pan at Amazon there was no way I wasn’t having it. And when I realized that it would be the perfect Valentine heart chocolate bark shape, it was on like, well, Donkey Kong, I suppose. So I made my thing. I was proud of my thing. It was just as I pictured it in my head. And then Rob asked “why would you want to give somebody your heart to break on Valentine’s Day?” Oh. Crud. I am all about personalized gifts and even better when they are homemade. My husband isn’t fond...

easy heart shaped cinnamon rolls for Valetine's Day

Image
So before we get started I have to tell you a funny story. As I was working on today’s recipe (these adorable heart shaped cinnamon rolls) I tried out a couple variations, which means we ended up with a gazillion cinnamon rolls. After I got them all photographed and let the kids each eat one I suggested that we put the rest on a plate and take them to a neighbor. One of my kids said, “Well, mom, since these aren’t from scratch I’m not sure they’re actually good enough to give away to neighbors…” and I got worried maybe they didn’t taste that great…until I realized my scheming child just wanted to make sure that not one cinnamon roll left our home to be eaten elsewhere 🙂 Heart-Shaped Cinnamon Rolls - the cutest and best cinnamon rolls ever, made into heart shape and stuffed with red cherries. So adorable! Valentine’s Day is coming up in less than 10 days and I am sure you love birds are looking for creative ideas to make for the special day. I have the perfect recipe for you...

Looking for a creative lunch or breakfast idea for the kids? This Valentine’s Day Food Craft is cute, easy, and unique. Tic-Tac-Toe Toast uses peanut butter and conversational hearts! See who wins first! A few months back I mentioned here that my girls love planning Tic Tac Toe. I even included a fun Halloween themed printable for all to enjoy Tic Tac Toe. In that vain, I recently just bought Valentine’s themed conversation hearts. You know the hearts I am talking about. Those adorable little sugary hearts that have all sorts of fun little sayings on them for Valen...

The BEST Basic Pancake Recipe

Image
For years, I used a box mix to make pancakes. It was easy — just add water (and maybe an egg, depending on the fanciness of the mix) and pour the batter on the griddle. Then the internet came along and showed me that I could make pancakes from scratch and at a fraction of the cost of a mix. And, surprise! The pancakes actually taste better. First, we must master the basic pancake. And while whipping up a batch takes no time at all, there are some rules to pancake creation to make sure your pancakes turn out fluffy and delicious every time: Ingredients 2 c. all purpose flour 1 T. baking powder 3 T. white sugar 1/2 t. salt 2 eggs 1-1/2 c. milk 2 t. vanilla 1 T. butter, vegetable oil or coconut oil Instructions: Preheat a griddle. If you’re using an electric griddle, preheat to 350 degrees. In a mixing bowl add flour, baking powder, sugar and salt. Mix well. Make a well in the center of the flour mixture and add eggs, milk and vanilla. Stir to combine. Remember,...
