EASY SAUSAGE CASSEROLE RECIPE WITH MOCK POTATOES

I wanted to serve my family an alternative potato dish this Thanksgiving. When I used diced daikon radish in a low carb clam chowder, I wondered how it would be in something like scalloped potatoes.

Since the Japanese daikon radish has very little flavor, I thought an additional item should be added to the dish. We have lots of venison sausage in the freezer so it made sense to use some with the daikon.

Although I was seeking a scalloped potato dish, the result was more like a casserole. That’s why I’m calling it an easy sausage casserole with mock potato.


I thought of calling the dish a sausage potato casserole, but that’s a little misleading. Although the radish does taste like potato, technically it’s not.

We hope you all had a very Merry Christmas. We enjoyed watching Caleb wake up on Christmas morning to open presents. Of course, he loved the boxes and paper just as much as the gifts. We spent the rest of the day in the kitchen and relaxing with family. It was a perfect day.

For the recipe, you will need Hillshire Farm Turkey Smoked Sausage. The Smoked Sausage is made with quality cuts of turkey and slow-cooked natural flavors. We like to keep this sausage in our fridge. It is great for making a quick and easy meal.


INGREDIENTS
Creamy Soup:

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/2 cup chicken broth
  • 3/4 cup milk
  • salt and pepper to taste

Casserole:

  • 1 pound loose chicken or pork sausage
  • 1/4 cup chopped onion
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups sliced peeled potatoes
  • 1 cup chopped red or green bell pepper
  • 1 1/2 cups shredded mozzarella cheese

INSTRUCTIONS

  1. Prepare creamy soup mixture by melting butter in a small saucepan. Whisk in flour. Continue to stir and cook for about 2 minutes. Stir in chicken broth and milk. Cook over low-medium heat continuing to stir until thickened. Season with salt and pepper. Set aside.
  2. Preheat oven to 350°. In a large skillet, cook sausage and onion over medium heat until thoroughly cooked. Drain and set aside.
  3. Combine creamy soup mixture, milk, salt and pepper.
  4. Grease a 2 qt baking dish. Layer ingredients as follows: half of the potatoes, creamy milk mixture, peppers and sausage/onion. Repeat layers.
  5. Cover and bake 60-65 minutes or until potatoes are tender.
  6. Sprinkle with cheese. Continue to bake, uncovered for an additional 3-5 minutes or until cheese is melted.
