This Keto Fried Chicken almond flour recipe will make the perfect Keto fried drumsticks, Keto fried chicken breast or low carb chicken tenders. Originally the recipe was intended to be pan-fried chicken tenders, but I discovered it’s also an easy Keto air fryer recipe too.

You just need some keto diet basics, almond flour and Pork Panko (Pork rinds) and pickle juice! Ok, pickle juice isn’t exactly a Keto pantry staple, but I’ll explain…

You’re craving the savory crunch of fried chicken.

But you don’t want to fall off your diet gorging at Chick-fil-A (or maybe it’s Sunday…).

These Keto Chick-fil-A Style Fried Chicken Tenders swap breading for protein powder (really!) and peanut oil for avocado oil – so you get all of the flavor and none of the guilt.

And the secret to recreating Chick-fil-A’s magic? Marinating for hours in a jar of pickle juice.

You won’t believe how close to the real thing these are.

Just be sure to eat with heaping portions of your favorite dipping sauce. We loved these in good ol’ ranch, but you can try a keto honey mustard or your own copycat Chick-fil-A sauce.

Ingredients

  • 8 chicken tenders
  • 24 oz jar of pickles (just the juice!)
  • 3/4 cup almond flour
  • 1 tsp seasoned salt
  • 1 tsp pepper
  • 2 eggs beaten
  • 1.5 cups finely crushed pork rinds
  • coconut oil for frying

Instructions

  1. Combine chicken tenders and pickle juice in a large resealable bag and let it marinate for at least 1 hour (overnight is best!).
  2. In a small bowl, mix almond flour, salt and pepper.
  3. Gather three bowls and add the almond flour mixture to one, the eggs to another and the crushed pork rinds to the last one.
  4. Dredge the chicken in the almond flour mixture, then dip into the egg and finally roll to coat in the pork rinds.
  5. Heat two inches of coconut oil in a pan over medium/high heat. 
  6. When the oil is hot, add tenders and cook them in batches. Avoid overcrowding the pan so that the pieces of chicken are not be touching (this will affect texture). 
  7. Cook about five minutes per side or until golden brown.
