Broccoli Cheese Bites

Image
Broccoli seems to be one of those veggies that you either love or hate. It has always been one of my favorite vegetables, especially topped with lots of cheese, but even if you’re not a fan, I think you’re going to really like this recipe, not only because it’s incredibly easy (4 ingredients!!), but these little broccoli cheese bites are really yummy, too. This is my favorite way to get my kids to eat their veggies because the broccoli is disguised so well, they don’t even realize they’re eating something healthy. They LOVE them! We like to eat them dipped in ranch as an after school snack. Do you like broccoli? I LOVE, seriously love broccoli. Favorite way to eat it? Steamed, served with a little mayo. I wish more people shared my enthusiasm. If you are in the not-so-sure-about-broccoli camp, or are cooking for someone who needs to eat more vegetables but is less than enthused at the prospect, this is the recipe for you. What’s the one thing that makes broccoli taste grea

Bang bang cauliflower

Image
Seriously, who knew cauliflower could be such a chameleon. I mean, once it’s prepped and tossed up in the sweet and spicy chilli sauce it’s hard to believe that it’s even cauliflower hidden under there! WHY I LOVE CAULIFLOWER: I love cauliflower in vegetarian cooking for its versatility. You can turn it into soup, rice and now even deliciously batter-coated bites! Cauliflower has a great dense and meaty texture, so it’s really satiating as far as veggies go. It also contains tons of vitamins, fibre and antioxidants. So basically you should be making this recipe on the reg. (I know I’ve been…) This bang bang cauliflower can be served up as a main dish over rice, or served up for as an Asian style appetizer. You could even serve these as a veggie option at a holiday party. Just leave some toothpicks by the bowl and let your guests pick away! Cauliflower is such a great ingredient at this time of year. It’s one of my favourite vegetables as there are so many amazing things you c

Carrot Cake for One

Image
Is this not the cutest cake you have ever seen?? It’s a carrot cake for one person, and not only is it cute: it tastes amazing! And it is totally legitimate breakfast food. You could also use it as a snack or dessert. With spring in the air, my mind was on carrot cake. I have several carrot-cake-inspired recipes on my list of recipe ideas, but a THM:E single-serve carrot cake won out. It turned out even better than I had hoped it would, and I had so much fun photographing it. In my family, the cake that is always requested for birthday celebrations or other events is a Carrot Cake. I’m totally fine with that request because I happen to love carrot cake too. A few months ago, for my son’s 20th birthday, I made a non-traditional style carrot cake for him. I say it was non-traditional because I normally make a two-layer carrot cake with a cream cheese filling between the layers. This time, I baked the cake in a pretty bundt pan. I also topped the cake with a orange glaze very sim

Low-Carb Crustless Taco Pie

Image
This Low-Carb Crustless Taco Pie is a spicy crustless quiche. It’s loaded with ground beef that is spiced up with taco seasoning, green onions, cheese, and salsa. Top it with whatever you like on your tacos–sour cream, guacamole, diced tomatoes, chopped onions, or whatever else you love. My favorite thing about this taco pie is how easy it is to make. Just brown some ground beef and add some spices. Stir this into an egg mixture and pour into a pan. Top with some grated cheese, and pop into the oven. In 35 minutes, dinner is done! Another thing I love about the recipe is that it seems to be a family favorite for people who eat low-carb as well as people who don’t . Kids even seem to love this one! It’s from Carolyn Ketchum’s new book, Everyday Ketogenic Kitchen. Although I don’t follow a ketogenic diet, I loved this dish. Crustless low carb taco pie is an easy, tasty, and satisfying main course. Now, if you’re anything like me, the word “ketogenic” is not in your everyday vo

Irish Soda Muffins

It’s officially March!    Spring is on the horizon along with the holidays of  St. Patrick’s day and also Easter.  I don’t know about you, but we are eager for Spring….the warmer temperature, the shining sun and nature begins to come back to life.  We see the color green return.  Ah, yes – green….a reminder of St. Patrick’s Day.  A fun traditional Irish holiday that started based on a fascinating man named Patrick.  Click to learn more about the story of Patrick and why we celebrate every year on March 17th.  It will give you insight and a greater appreciation of this annual holiday other than just clovers, parades and wearing green. I do not have much Irish in my blood line, but that doesn’t stop us from celebrating!   Each year on St. Patrick’s day I try to dabble into some classic Irish recipes and fun green desserts.   Below is a delicious twist on classic Irish Soda bread.  These Irish Soda Muffins are dense, moist and actually a perfect addition to meals year round (I occasiona

IRISH EGG ROLLS WITH PARSLEY CREAM SAUCE

Image
I love St. Patrick’s Day food and these Irish Eggs Rolls are an easy St. Patrick’s Day appetizer (or meal!) full of tender corned beef and thinly sliced cabbage wrapped in a crispy egg roll wrapper. Corned beef and cabbage egg rolls seemed kind of obvious once I thought of it. I mean egg rolls are already filled with cabbage why not sub out the usual shrimp or pork and add corned beef instead? The combination is a delicious way to celebrate St. Patrick’s Day! Inspired by the typically deep fried Irish egg roll, our Irish Spring Roll recipe features a cabbage wrap filled with a delicious corned beef mixture of fresh ingredients, making it a lighter alternative that still packs a flavorful punch! Make your St. Patrick’s Day celebration the best yet by featuring our other two St. Patricks Day recipes below at your party! Now a good Irish Egg Roll needs a great sauce. My guy swears that corned beef and cabbage is made even better by his favorite parsley cream sauce. It’s milk, heavy

Grandma's Chocolate Ribbon Dessert

Image
This particular recipe holds a special place in my heart.  This my Grandma Carole’s chocolate ribbon dessert recipe.  My Grandma may not have cooked or baked much, but the things that she did make are filled with some very sweet memories for me.  I believe this is one recipe that reminds all my family of Grandma.  I was thinking about no-bake type recipes the other day and this one popped in my head.  It is near no-bake.  The crust has to be baked, but the rest is mix, spread and refrigerate.  Don’t let the simplicity fool you.  This is a truly delicious dessert.  The creamy layers are rich and will fix a chocolate craving.  I hope you love this recipe as much as our family does. The crust is simply flour, butter and ground nuts.  I put all 3 ingredients in a food processor and pulse until it is well mixed.  Sprinkle the crust in a lightly greased 9×13 baking dish.  Press the crust down and bake for 17 minutes at 350 degrees.  Cool baked crust completely before adding the layers.
