Key Lime Pie Energy Bars

Life gets really crazy sometimes which means skipped meals and a high risk for hangry episodes. Crazy/busy/hectic also translates into poorly executed snack attacks if you’re not prepared.

Thankfully, there are a multitude of great pre-made snacks out there that you can drop into your bag or carryon luggage, stash in your desk drawer or hand over to your approaching-critical-mass children when you’re stuck in traffic somewhere between errands number five and six. Because ain’t nobody got time for a meltdown.

You might have already guessed that I’m pretty keen on kitchen DIY, when it’s easy. If I can take just 15 minutes to whip out a lifesaving snack for the week then I’m all about it. Like these Key Lime Pie Energy Bars. They’re just 5 ingredients and no crap or fillers and they’re a great alternative to Larabars since there’s no packaging, you can customize the flavors (or add collagen or other protein powder, if you please) and use can use organic ingredients (sadly, Larabars are not organic). Plus, my kids love making them. All I really have to do is supervise the food processor part because rubber spatulas stuck into the moving food processors is messy. Yeah, that happened.

Place all ingredients in the food processor and process until mixture resembles very coarse sand and sticks together when you pinch it between your fingers. If the mixture is too dry – add another date or a few drops of water and process again. If mixture is too wet, add a few more nuts and process again.



If you’re going to add collagen or unflavored protein powder, you’ll likely need to tinker with the amount of moisture because some powders (like plant-based powders) seem to soak up more moisture than does collagen or egg-white powders.

Press the fruit and nut mixture into a square on a parchment-lined baking sheet or roll the mixture between your hands to form it into balls. Both are delicious, just depends on if you want a bar or a ball.
INGREDIENTS

  • 20 pitted deglet dates (or 10 medjool dates, pitted)
  • 3/4 cup whole almonds
  • 3/4 cup raw cashews
  • 1/4 cup unsweetened shredded coconut
  • Zest of 2 limes
  • Juice of 1 lime
  • Pinch of sea salt

INSTRUCTIONS

  1. Place all ingredients into the bowl of a food processor.
  2. Process until mixture is crumbly yet still holds together well when pinched between your fingers. If mixture is too dry, add another date and process again or add a splash of water. If mixture is too wet, add a few more nuts and process again until crumbly.
