Cranberry-Orange Pinwheel Cookies

Image
A soft pinwheel cookie with a burst of festive color from the cranberry and pecan filling. You might remember these from last year. They’re a tradition in this house. An absolute must. When I asked The Mr recently what his top 5 favorite cookies were, these were on the list. Of course he couldn’t even give me a list of 5 but that’s not the point. I’ve been making them for Christmas easily the last 6 years or more. I like making these for the aromas. The orange zest and cranberries give off wonderful fragrances. How something smells is just as important as how it looks and tastes, to me anyway. And these smell incredible. They also have a nice light taste. You can eat cookie after cookie without having a heavy feeling in your stomach like certain other desserts can cause Cranberry-Orange Pinwheel Cookies Yield:  Roughly 4 dozen cookies Cook Time:  8-10 minutes Total Time:  24+ hours Ingredients: 1C fresh cranberries 1C pecans 1/4C light brown sugar 1C unsalted

NUTELLA MUG CAKE

Image
This single serving Nutella mug cake is ridiculously easy to make with just 3 ingredients. It's rich, dense, chocolatey and everything a flourless cake should be. You may recall earlier last year I posted my 2 Ingredient Flourless Nutella Mug Cake, a recipe I created for my 5-Minute Mug Cakes* cookbook. It remains one of my favorite recipes to date, but a lot of readers were avoiding it because the recipe requires the cake to rest for several hours (even though it only takes 5 minutes to make). Nutella Mug Cake Ingredients:  1/4 cup Nutella  1 large egg  1/2 tbsp dutch processed cocoa powder Directions: Combine all ingredients in an oversized microwave-safe mug. Mix vigorously with a small whisk until batter is smooth and the egg has been completely mixed in. Cook in the microwave for about 1 minute 10 seconds. The cake should be set but may be slightly wet on top. Let cake cool for 15 minutes before serving. The cake will condense down during this cooling proces

Cherry Pineapple Dump Cake

Image
This truly is one of my favorite desserts. I am so glad you stopped by today. If you have a party or family gathering, this is perfect. It is like a cobbler cake.  Don’t expect it to come out neat and cake like, because it does not. This is a scooper cake, not a cake you turn over in the pan. It’s as easy as 1,2 3.  You can whip this up and have it in the oven all in 5 minutes. Cherry Pineapple Dump Cake Prep Time 5 minutes Servings: 4 Ingredients 1 21 oz. Nutella and Banana Stuffed Crescent Rolls

Image
Stuff a buttery crescent roll with banana and a schmear of Nutella, roll it in cinnamon sugar, and bake. This is the easiest recipe for happiness, in 10 minutes flat. Am I the only one with a banana-Nutella addiction? The mini-Karen-angel on my shoulder says, “let’s be healthy Karen! Have a banana for a snack!” and the mini-devil-Karen on my other shoulder says, “Yes Karen…a banana WITH NUTELLA.” And thus I am led, carefully and surely, down the path to diabetes. Nutella and Banana Stuffed Crescent Rolls Ingredients  1 can crescent rolls (8 rolls)  1/4 or 1/3 cup Nutella  2 bananas  1/3 cup sugar  1-3 teaspoons cinnamon Instructions Preheat the oven to 375 degrees F. Lightly spray a baking sheet or line with parchment paper or a silpat. Open the can of crescent rolls and unroll. Spread some Nutella on the fat end of each roll. I didn't measure. Like a half tablespoon or so. Cut each banana into 4 segments. Place one on each roll. Roll up the dough and

DEVIL’S IN THE DETAILS | KAHLUA CHOCOLATE CAKE

Image
Kahlua Chocolate Cake delivers rich chocolate flavor with warm Kahlua undertones. The recipe for the first cake I remember baking, a Kahlua Chocolate Cake, comes from one of my mom’s closest friends.  My mom asked for the recipe the very first time she tasted Stephanie’s rich, addictive cake. It’s one of those desserts that people fall in love as soon as the first bite hits their taste buds.  Without fail, every time I bake it, at least one person asks me for the recipe. Kahlua Chocolate Cake Prep Time 15 mins Cook Time 60 mins Total Time 1 hour 15 mins Author Suzanne Cowden Recipe type Dessert Serves 10 to 12 INGREDIENTS Cake 4 ounces unsweetened chocolate, chopped 2¼ cups unbleached all-purpose flour ¼ cup unsweetened cocoa powder 1½ teaspoons baking soda ½ teaspoon salt 1 cup Kahlua 1 cup sour cream 9 tablespoons unsalted butter, softened but still cool 1½ cups brown sugar 3 large eggs 2 teaspoons vanilla extract ¼ cup boiling water 1½ cup

Red velvet cake with chocolate chips and a cream cheese frosting that tastes like the popular Nothing Bundt cake. Summer is here! Well, not the season but the kids are out from school. Yay for them! I’m so happy they can relax and take some time off. I remember being SO excited for Summer when I was a child. It’s so exciting. But now I’m a parent and it’s a bit different. I love my kids so much and truly enjoy spending time with them, but Summer is HARD for blogging mommies. And also for work from home daddies.
