Ina’s Apple Pie Bars – Easier Than Apple Pie!

I baked Ina Garten’s Apple Pie Bars on Sunday afternoon and it’s safe to say that it’s the best baking recipe that I’ve tried in a long time. Ina + Apple Pie = two things you just can’t go wrong with. I inadvertently messed up on the recipe but I think that made the bars even better. Also, I was heavy handed with the spices, changed the type of apples and added more apples than called for so I decided to share my take on the recipe with you. I personally think these bars are JUST as good as a big slice of apple pie, if not better. They’re definitely easier than apple pie due to the ease of making the pastry crust. (I don’t agree with that whole “easy as apple pie” quote when it comes to making pie crust.) The pastry crust here is made in a mixer and then pressed into the bottom of a parchment paper-lined pan. This beautiful dairy free / vegan lemon cake is light, moist and CRAZY delicious! Just like these vegan chocolate chip cookies, you’d never know it was free from anything. Easy Vanilla Cupcakes

You know how there are some recipes that everyone needs to know? Like how to make the best ever cheese on toast, how to cook the perfect steak, how to bake a potato and how to make a soft-boiled egg? Well these easy vanilla cupcakes are made with this sort of recipe. When you can make moist vanilla cupcakes, the sky is the limit. Banana Chia Pudding is a super quick an easy way to make a pudding for little people. Sweetened with fruit it has no added sugar and it is an allergy friendly recipe. I often make this Banana Chia Pudding with Coconut Milk but it will work equally well with any milk, including cows milk, soy, almond etc, you can literally choose whichever milk you would like or your child prefers or can tolerate Yes, you read that right, a chia seed pudding like this banana chia pudding is essentially how you can make an egg-free custard. It is also a no cook/no heat custard which is also brilliant if you happen to be in the one-handed cooking phase of your life (ie. you are a one-handed cook because you have a baby on your hip!) Cowboy Cookies

I’m not sure of the origin of Cowboy Cookies and you’ll find a variety of versions of them if you look online. To me, they mean a cookie that’s packed full of good stuff like a cowboy is. This recipe has a lot going on with chocolate chips, oats, raisins and almonds. It makes one delicious cookie! Feel free to tweak it and add your own spin to it. Don’t like raisins? Try dried cranberries or leave them out. Chocolate chips not your thing? Add some white chocolate chips or butterscotch chocolate chips. You get the idea. Just make sure you pack them full of your favourite ingredients! I can tell you that this batch of Cowboy Cookies did not last long. It makes three dozen cookies so I spread the love by giving some to my cousin to take home to her family. She has two teen boys with insatiable appetites. My recipes get gobbled up way faster at her place than mine. I have picky eaters here. However, my girls both liked this recipe and even Olivia’s boyfriend had a few. ingredient
